Zucchini and Cheese Quiche



Quiche is an easy dish that you can prepare with basically anything you have in the fridge, even leftovers. You can enjoy it in plenty of occasions, from a family dinner to a picnic with friends. You can even prepare it ahead of them, cut it into slices and freeze them, so you'll have lunch ready to take to school or to work. Here is a great recipe to make zucchini and cheese quiche.

Ingredients:
4 medium zucchini
Half onion
1 piece of garlic
1 tbspoon olive oil
1/2 cup diced cheese of your choice
2 eggs
1/2 cup milk
1/4 cup ricotta cheese
Salt
Pepper

Crust: you can either buy it or do it from scratch following this recipe.

Directions:

1. Chop the onion and garlic, then put them in a pan with some olive oil and a little bit of water. Cook for 5 minutes or until they are soft and golden.


2. In the meantime, wash the zucchini and cut them into small pieces. Add them to the pan and cook for about 15 minutes.


3. Whisk the eggs in a separate bowl. Then add the milk, the cheese, the ricotta cheese, the zucchini, salt and pepper. The filling is now ready!


4. Put the filling on top of the crust.
(If you are making your own crust, spread some olive oil on a cake pan, roll the crust and place it on the pan. Make sure that you leave a good amount of crust on the edges so it can hold the filling. Make some holes in the bottom with a fork.)

5. Bake the quiche in the oven at 425°F for 15 minutes, then lower the temperature to 350°F for another 30 minutes. Let it sit for some minutes before serving and...enjoy!
